The story of our Gauchos and our country is as robust as the meal you will enjoy at Pau Brasil.
In the early 1800’s, European immigrants settled in the Rio Grande do Sul area of Brasil.
These Brazilian settlers were excellent horseman, so they quickly became adept at raising and herding cattle.
The settlers, our ancestors, became known as Gauchos. A unique type of cooking, inspired by the Gauchos, was called churrasco (shoo.rhas.co).
After digging pits in the ground, the Gauchos would start a fire using the wood from the rangelands of the Pampas.
Once the fire turned to golden embers, large portions of prime meats were skewered and slowly roasted to perfection over the fire pits.
As groups of families would gather for meats, Gauchos would carry bountiful portions of meats, fruits and vegetables to the table.
